Ingredients (Makes 6 servings)
2 lb (900 g) tiny new red-skinned potatoes, washed, unpeeled
2 tbsp (30 mL) white wine vinegar, (red wine vinegar is ok too)
2 cloves garlic, minced
2 tsp (10 mL) chili powder
1 tsp (5 mL) hot pepper flakes
? tsp (1 mL) smoked paprika or ancho chile powder
? tsp (1 mL) cayenne pepper
2 tbsp (30 mL) olive or canola oil
2 tbsp (30 mL) fresh lemon juice
Salt & freshly ground pepper to taste
Chopped green onion, fresh parsley and/or cilantro, (optional, for garnish)
Place potatoes in a medium saucepan and add enough cold water to cover. Bring to a boil over medium-high heat; reduce heat and boil gently for 15-20 minutes, or until just tender. Drain and let cool slightly. Cut potatoes in half (or quarters for larger potatoes) and transfer to a bowl. Add vinegar; toss and set aside for 30 minutes.
n a small bowl, combine garlic, chili powder, hot pepper flakes, paprika, cayenne, oil, lemon juice, salt and pepper. Pour over potatoes and stir gently to coat. Cover and refrigerate for at least 2 hours, or for up to 8 hours. Sprinkle with green onion, parsley or cilantro, if desired, before serving.

Oven Roasted Red Potatoes with Rosemary and Garlic Ingredients:
700 gr. small and new red potatoes
60 milliliters olive oil
4-6 garlic cloves
1 tablespoon dried rosemary
Pill the potatoes. Dry them. Squeeze the garlic cloves out. Preheat the oven to 177 degrees Celsius. Pill a narrow strip of the rind from the middle of each potato. Mix up the squeezed garlic, rosemary and oil in a bowl. Add the potatoes into this bowl. Place the ingredients from the bowl on a shallow baking pan. Oven them till the moment when the potatoes become soft and tender. Serve this dish hot. It may be also used as a side dish for the fried chicken, bacon or ham.
Smashed Red Potatoes with Garlic
900 gr. small red potatoes
4 garlic cloves
3 tablespoons butter
1 teaspoon salt
60-120 milliliters milk
Pill the potatoes. Cut them in the small parts. Place the potatoes and garlic, which should be pilled and cut beforehand, in a pot. Add the water and salt. Reduce the fire to the middle-low level, when it begins to boil, and cook the potatoes till the moment when they become soft and tender. Pour the water out. Add the butter and milk in the pot and mash well. Add salt and pepper to your taste.
