German Potato Candy Recipe

Ingredients:

1 medium potato
2 boxes confectionary sugar (powdered sugar)
peanut butter (smooth)

Preparation:

Scrub potato and cut it into cubes. Boil the potato cubes until they are fork soft. Next drain the pan of all water and crush the potato in a bowl. Add the confectionary sugar. The dough may be very watery firstly, but in some time it will harden up. Knead the dough, little by little adding sugar into it. Continue to add sugar until the dough won’t take any sugar. Spread powdered sugar on the cutting board and then roll out the potato dough to approximately 0,5 inch thick. Smear the peanut butter over the top of the dough and roll it back. Place the roll in the fridge for an hour. Thereafter take it out it into 1/4 or 0,5 inch thick slices.
