Low Fat Potato Recipes

Baked potato skins (low fat recipe)

Baked potato skins

Ingredients:

4 md baking potatoes
Pam butter flavour non-stick spray
0,5 cup of grated nonfat cheddar cheese
3 tb of lean cooked bacon beats
0,5 c of minced green onions

Preparation:

Preheat the oven to 400 degree. Peel potatoes and prick generously with a fork. Bake them in the oven. It will take you approximately an hour. Once potatoes are fork soft, remove them from the oven. Next divide potatoes into halves across the length and pick out the centers by leaving a 0,5 shell. Keep the potato pulp for some other use. Divide shells into halves across the length. Then spray the shells with butter flauvored spray and put on a large baking tray. Preheat the oven to 500 degree and bake the shells for approximately 15-20 minutes until mealy. Strew with cheese, bacon bits and onion. Reduce the heat to 400 degree in the oven and return the dish to it. Bake for 3 minutes until the cheese has melted.


   

Potato, Onion and Garlic Gratin (low fat recipe)

Potato, Onion and Garlic Gratin (low fat recipe)

Ingredients:

4 lg baked potatoes, scooped out and crushed
2 lg onions, baked
Salt and paper to your taste
2 tablespoons of buttermilk
4 tablespoons of grated Parmesan cheese
0,5 cup of skimmed milk

Preparation:

First remove the papery covering of the garlic heads without scrubbing and separating the cloves. Wrap up in a foil and place them in the oven. Take a double sheet of foil and place onions on it without wrapping. Put onions in the oven as well. Heat the oven to 425 degree and bake the garlic for an hour and onions for 1,5 hours. Then remove the garlic heads, unwrap and let them stay for 5 minutes. Divide the garlic into individual cloves. Squeeze the garlic over a bowl. After 1,5 hours remove the onions from the oven in case if they are soft. If not place them back in the oven for several minutes. Take a sharp knife and cut out the stem and the root ends of the onions. The skin and the first layer should be removed as well. Place the onions in the kitchen machine and puree them. Reduce the heat to 350 degree in the oven. Next, whisk together the onions, potatoes, garlic, salt and pepper. Stir in the buttermilk. Place the mixture into a gratin dish. Thereafter smooth the top and strew with cheese. Sprinkle milk evenly over the top of potatoes. Bake the dish for approximately 30-40 minutes, until brown.
