Roasted Fingerling Potatoes


2 pounds fingerling potatoes
5 cloves garlic, pressed and finely minced
3 tablespoons olive oil
2 teaspoons lemon juice
1/2 teaspoon dried leaf thyme
Sea salt and freshly ground black pepper
Cajun flauvoring


First preheat the oven to 450 C. Thereafter oil the baking pan that is not to deep. You may also spray it with olive oil spray. Peel potatoes. It is preferably to cut large potatoes in two parts. Mix the garlic, lemon juice, olive oil, thyme, pepper and flavoring in a big bowl. Then add potatoes to this mixture. Roast the dish for about 30 minutes. According to your choice you may sprinkle potatoes with a Cajun flavoring before baking. You can serve the dish with a vegetable salad or with any main dish.

Perfect Fingerling Potatoes


* 1 1/4 pounds kosher or rock salt
* 2 quarts water
* 2 pounds small fingerling potatoes, cleaned
* 4 tablespoons butter
* Freshly ground black pepper
* 1 tablespoon freshly chopped chives


It will take you 30 minutes to prepare this dish. Pour water in a large pan. Add potatoes and some salt. Then bring the water to the boiling pot. Cook potatoes about 30 minutes. You can also check potatoes with a fork to know if they are tender. Remove from the pan to a cooling rack. Cool potatoes for approximately 5-7 minutes. Now you can serve fingerling potatoes with butter, pepper or chives.
