2 cups milk
4 russet potatoes, cut into 1/4 inch slices
salt and pepper to taste
3 tablespoons butter
1/2 teaspoon salt
3 tablespoons flour
1 1/2 cups crushed Cheddar cheese
1 onion, cut into rings

First heat the oven to 200 degrees C. Butter a 1 quart casserole pan. Place 0,5 of the potatoes into the bottom of the casserole pan. Cover potatoes with onion and then add the remaining potatoes. Flavour potatoes with salt and pepper to your taste. Next melt butter over low- medium heat in a mid-size pot. Stir in the flour and salt. Continue to stir the mixture for about 1 minute. Mix in milk. The mixture has to become thickened. Thereafter mix in cheese and stir until the cheese has melted. It will take you approximately 30-60 seconds. Pour the cheese mixture over the potatoes and then cover the dish with aluminum foil. Bake the dish in oven for about 1,5 hours.
